Description

These Cheesy Barbecue Meatball Bites are the perfect appetizer or main dish, packed with flavor and cheese goodness!

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup barbecue sauce
  • 2 tablespoons chopped parsley for garnish
  • Additional shredded cheese for topping (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Mix the Meatballs: In a large bowl, combine ground beef, cheddar cheese, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, salt, and black pepper. Mix until well combined.
  3. Form the Meatballs: Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake: Place the meatballs in the oven and bake for 15 minutes.
  5. Add Barbecue Sauce: Remove the meatballs from the oven and brush them generously with barbecue sauce.
  6. Return to Oven: Sprinkle additional cheese on top if desired. Return the meatballs to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
  7. Garnish: Once done, remove the meatballs from the oven and sprinkle with chopped parsley.

Notes

  • For extra flavor, try mixing in some herbs like oregano or basil into the meatball mixture.
  • If you prefer a spicier kick, add some crushed red pepper flakes to the meat mixture.
  • Make sure the meatballs are evenly sized to ensure consistent cooking.
  • These can be served as appetizers or as a main dish with sides like mashed potatoes or a salad.
