- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (4 oz) can green chiles
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 (15 oz) can white beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 2 cups cooked shredded chicken
- 4 oz cream cheese, cubed
- 1/2 cup sour cream
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook for about 5 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add green chiles, cumin, oregano, salt, and black pepper. Stir to coat the onions.
- Pour in the chicken broth and bring to a simmer.
- Add white beans, black beans, and shredded chicken. Simmer for 15 minutes.
- Reduce heat to low. Add cream cheese in chunks and stir until melted and smooth.
- Stir in sour cream until the chili is thick and creamy.
- Serve hot with desired toppings like shredded cheese, cilantro, jalapeños, or tortilla chips.
