Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • 1 cup white chocolate chips
  • ½ cup heavy cream
  • Pink food coloring
  • Assorted sugar pearls or fondant balls
  • 2 tbsp cornstarch
  • ¼ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, salt, and cornstarch.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Add in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. In a heatproof bowl, combine the white chocolate chips and heavy cream.
  8. Microwave in short increments, stirring until smooth. Add a few drops of pink food coloring until the desired shade is achieved.
  9. Allow the drizzle to cool slightly to thicken.
  10. Place one cake layer on a serving plate. Pour half of the pink drizzle over the top, letting it drip down the sides.
  11. Place the second cake layer on top and pour the remaining pink drizzle over it.
  12. Roll fondant into small balls or use sugar pearls for decoration.
  13. Dust these with powdered sugar for a frosted effect and arrange them on top of the cake.
