- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
- 1 cup white chocolate chips
- ½ cup heavy cream
- Pink food coloring
- Assorted sugar pearls or fondant balls
- 2 tbsp cornstarch
- ¼ cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, salt, and cornstarch.
- In a separate bowl, cream the butter and sugar until light and fluffy. Add in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a heatproof bowl, combine the white chocolate chips and heavy cream.
- Microwave in short increments, stirring until smooth. Add a few drops of pink food coloring until the desired shade is achieved.
- Allow the drizzle to cool slightly to thicken.
- Place one cake layer on a serving plate. Pour half of the pink drizzle over the top, letting it drip down the sides.
- Place the second cake layer on top and pour the remaining pink drizzle over it.
- Roll fondant into small balls or use sugar pearls for decoration.
- Dust these with powdered sugar for a frosted effect and arrange them on top of the cake.
Notes
- For extra flavor, add a teaspoon of almond extract to the cake batter.
- Ensure the cake layers are completely cool before pouring the drizzle to prevent it from melting off.
- For a more intense pink, use gel food coloring instead of liquid.
- Store the cake in an airtight container to maintain its freshness.
