This delicious vegan banana coconut pudding is a perfect dessert for coconut lovers!
Ingredients

- 4 ripe bananas
- 2 cups coconut milk
- 1/4 cup maple syrup
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Vegan cookies or wafers for layering
Instructions
- In a saucepan, combine coconut milk, maple syrup, cornstarch, vanilla extract, and salt.
- Heat over medium heat, stirring constantly, until the mixture thickens.
- Remove from heat and let it cool for a few minutes.
- Slice the bananas.
- In a serving dish, layer the pudding, banana slices, and vegan cookies.
- Repeat layers until all ingredients are used.
- Chill in the refrigerator for at least 2 hours before serving.
