This delicious vegan banana coconut pudding is a perfect dessert for coconut lovers!


Ingredients

  • 2 cups coconut milk
  • 1/4 cup maple syrup
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Vegan cookies or wafers for layering

Instructions

  1. In a saucepan, combine coconut milk, maple syrup, cornstarch, vanilla extract, and salt.
  2. Heat over medium heat, stirring constantly, until the mixture thickens.
  3. Remove from heat and let it cool for a few minutes.
  4. Slice the bananas.
  5. In a serving dish, layer the pudding, banana slices, and vegan cookies.
  6. Repeat layers until all ingredients are used.
