Description

These chocolate pancakes come together with minimal effort, but the results are nothing short of heavenly. I still remember my first attempt—slightly too much cocoa and not enough fluff—but through trial and error, this version strikes the perfect balance.

Ingredients

Scale
  • 1 cup (140g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 cup (50g) granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (240ml) milk
  • 1 large egg
  • 4 tablespoons (55g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup (90g) chocolate chips

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt. This ensures even distribution and prevents clumps of cocoa.
  2. Combine wet ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
  3. Make the batter: Pour the wet ingredients into the dry ingredients and stir just until combined. The batter will be thick and slightly lumpy—resist the urge to overmix. Gently fold in the chocolate chips for extra bursts of melted chocolate in every bite.
  4. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Scoop about 1/4 cup of batter per pancake and cook until bubbles form on the surface and the edges look set—about 2 minutes. Flip and cook for another 1–2 minutes until cooked through.
  5. Serve and enjoy: Stack the pancakes high and serve warm with powdered sugar, whipped cream, berries, or maple syrup. For a more indulgent twist, drizzle with melted chocolate or add a dollop of chocolate hazelnut spread.
