Delicious baked potatoes stuffed with seasoned beef, black beans, cheese, and fresh toppings.

- 4 medium russet potatoes
- 1 tablespoon olive oil
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1 can (15 ounce) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- ½ cup salsa
- 2 medium green onions, chopped
- ¼ cup sour cream
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prick each potato with a fork, rub with olive oil, and season with salt and pepper.
- Place the potatoes on a baking sheet and bake for 45 to 55 minutes until tender.
- While the potatoes bake, brown the ground beef in a skillet over medium heat, drain excess fat, and stir in the taco seasoning with a splash of water; simmer for 3 minutes.
- Warm the black beans in a small saucepan or microwave.
- Remove the potatoes from the oven, slice each lengthwise, and gently fluff the insides with a fork.
- Top each potato with seasoned beef, black beans, shredded cheese, salsa, chopped green onions, and a dollop of sour cream.
Notes
- For extra flavor, consider adding jalapeños or avocado.
