Ingredients
Scale
- 2 pounds chicken wings, split and tips removed
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 cup honey
- 1/3 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons hot sauce
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top. This helps air circulate around the wings, making them crispier. Pat the chicken wings completely dry with paper towels. This step is important. Removing moisture helps the skin crisp up beautifully. Toss the wings with baking powder, salt, black pepper, garlic powder, and paprika until evenly coated.
- Arrange the wings in a single layer on the rack. Bake for 40–45 minutes, flipping halfway through. As they cook, you’ll see the skin tighten and turn golden brown. The edges become crisp while the inside stays juicy. The smell at this point is incredible. It always reminds me of waiting impatiently in the kitchen, peeking through the oven door as the wings bubble and brown.
- While the wings bake, combine honey, soy sauce, brown sugar, hot sauce, garlic, and ginger in a saucepan over medium heat. Stir gently and bring to a simmer. In a small bowl, mix cornstarch and water. Pour it into the saucepan and stir continuously until the sauce thickens. It should become glossy and coat the back of a spoon. Taste and adjust the heat level if needed. Add a bit more hot sauce if you love extra spice.
- Once the wings are done, transfer them to a large bowl. Pour the warm sauce over the wings and toss until every piece is coated in that sticky glaze. Serve immediately. The combination of crispy skin and sweet heat is what makes Sweet and Spicy Chicken Wings so irresistible.
