Description

Delicious soft strawberry cookies with a hint of sweetness.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup strawberry puree (fresh or frozen)
  • 1/4 cup strawberry milk powder
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a bowl: combine flour, baking soda, and salt until well blended.
  3. Cream the butter and sugars together in a separate bowl until fluffy and pale, about 3-5 minutes.
  4. Add in the egg and vanilla extract, mixing until fully incorporated.
  5. Combine the wet and dry ingredients gradually, stirring gently until just combined.
  6. Fold in chopped strawberries and white chocolate chips (if using).
  7. Scoop tablespoon-sized portions onto a baking sheet lined with parchment paper, leaving space between each cookie.
  8. Bake in the preheated oven for 10-12 minutes or until the edges start turning golden brown.
  9. Cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

  • The strawberry puree can be made by blending fresh or frozen strawberries until smooth.
