Description

This delicious Strawberry Lemon Layer Cake combines the zesty flavors of lemon with sweet strawberry jam, perfect for any occasion.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 2 tbsp lemon zest
  • ¼ cup freshly squeezed lemon juice
  • 1 cup strawberry jam
  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries for garnish
  • Lemon slices for garnish

Instructions

  1. Prepare Cake Layers: Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans. In a bowl, sift together the flour, baking powder, and salt. In a separate bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Gradually add the dry ingredients to the creamed mixture, alternating with milk, starting and ending with the dry ingredients. Stir in lemon zest and lemon juice. Divide the batter evenly among the prepared pans and smooth the tops. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  2. Prepare Whipped Cream: In a chilled bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Chill until ready to use.
  3. Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of strawberry jam on top, followed by a layer of whipped cream. Repeat with the second layer of cake, jam, and whipped cream. Top with the final layer and spread remaining whipped cream over the top and sides of the cake.
  4. Garnish: Arrange fresh strawberries and lemon slices on top.

Notes

  • Lemon Flavor Boost: For an extra lemony flavor, add a teaspoon of lemon extract to the cake batter.
  • Jam Layer Variations: You can substitute with raspberry jam for a different berry flavor.
  • Whipped Cream Stability: Add 1 tablespoon of cornstarch to the whipped cream to help it hold its shape for longer periods.
  • Layer Evenness: Use a serrated knife to level the cake layers before assembly for a more stable cake.
