- 1 (15 oz) can whole kernel corn, drained
- 1 (15 oz) can cream-style corn
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (4 oz) can diced green chilies
- 1 cup chicken broth
- 1 cup heavy cream
- 1½ cups shredded cheddar cheese
- 1 (8 oz) block cream cheese, cubed
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper, to taste
- 2 tablespoons cornstarch (optional, for thickening)
- 1 tablespoon olive oil (for greasing or sautéing if preferred)
Instructions
- Start your day by placing the chicken breasts into the bottom of your slow cooker. Pour in the drained corn, cream-style corn, diced tomatoes with green chilies, and the can of diced green chilies. Sprinkle the cumin, chili powder, garlic powder, onion powder, salt, and pepper over the top. Add in the chicken broth and give it a quick stir. Then close the lid and set your slow cooker to low for 6–7 hours or high for 3–4 hours.
- Once the chicken is fully cooked and tender, use two forks to shred it right in the slow cooker. Stir in the heavy cream, cubed cream cheese, and shredded cheddar cheese. The heat from the chowder will melt everything into a rich, velvety blend.
- If you’d like a thicker consistency, mix 2 tablespoons of cornstarch with a few tablespoons of cold water in a separate bowl. Stir this slurry into the chowder and let it cook for another 15–20 minutes on high, uncovered.
- Give the chowder a final taste and adjust seasoning as needed. Serve hot, topped with diced avocado, tortilla strips, cilantro, or a squeeze of lime if desired.
