- 1 pound large shrimp, peeled and deveined
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 1 cup fresh mushrooms, sliced (button, cremini, or shiitake)
- 2 tablespoons olive oil (or vegetable oil)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced or grated
- 2 tablespoons soy sauce (or tamari for gluten-free)
- Salt and pepper, to taste

Instructions
- Start by washing and chopping your asparagus and mushrooms. Clean the shrimp, ensuring they are peeled and deveined.
- In a large skillet or wok, heat the olive oil over medium-high heat for about a minute.
- Add the minced garlic and ginger to the skillet. Sauté for about 30 seconds until fragrant.
- Toss in the shrimp and season with a pinch of salt and pepper. Cook until the shrimp turns pink, about 3-4 minutes. Remove from the pan and set aside.
- In the same skillet, add the asparagus and mushrooms. Stir-fry for about 5-6 minutes or until they are crisp-tender.
- Return the shrimp to the skillet with the vegetables. Pour in the soy sauce and mix for another minute.
- Garnish with sesame seeds and green onions if desired. Serve hot over steamed rice or enjoy it solo.
