Description

A quick and tasty stir-fry dish featuring shrimp, asparagus, and mushrooms.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1 cup fresh mushrooms, sliced (button, cremini, or shiitake)
  • 2 tablespoons olive oil (or vegetable oil)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • Salt and pepper, to taste
  • sesame seeds (For garnish)
  • green onions (For garnish)

Instructions

  1. Start by washing and chopping your asparagus and mushrooms. Clean the shrimp, ensuring they are peeled and deveined.
  2. In a large skillet or wok, heat the olive oil over medium-high heat for about a minute.
  3. Add the minced garlic and ginger to the skillet. Sauté for about 30 seconds until fragrant.
  4. Toss in the shrimp and season with a pinch of salt and pepper. Cook until the shrimp turns pink, about 3-4 minutes. Remove from the pan and set aside.
  5. In the same skillet, add the asparagus and mushrooms. Stir-fry for about 5-6 minutes or until they are crisp-tender.
  6. Return the shrimp to the skillet with the vegetables. Pour in the soy sauce and mix for another minute.
  7. Garnish with sesame seeds and green onions if desired. Serve hot over steamed rice or enjoy it solo.
