- 12 oz Italian sausage (mild or spicy)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cups bell peppers (1 red, 1 yellow, 1 green), sliced
- 3 cloves garlic, minced
- 14 oz diced tomatoes (canned)
- 12 oz penne or rigatoni pasta
- to taste Salt and pepper
- for serving Freshly grated Parmesan cheese
Instructions
- Gather and prepare all ingredients.
- In a large skillet over medium heat, heat olive oil. Add sliced sausage and cook until browned on all sides (7-10 minutes).
- Add chopped onion and bell peppers; sauté until softened (about 5 minutes).
- Stir in minced garlic; cook until fragrant (30 seconds). Add diced tomatoes with their juices; simmer gently.
- Cook pasta according to package instructions until al dente. Reserve some pasta water before draining.
- Combine drained pasta with the sausage mixture in the skillet; toss over low heat for 2-3 minutes. Adjust consistency with reserved pasta water if desired.
- Serve hot with freshly grated Parmesan cheese on top.
Notes
- This dish can be easily customized with different vegetables or pasta types.
- Make it spicier by using hot Italian sausage.
