Description

A creamy and rich seafood bisque made with shrimp, lobster, and crab meat, perfect for a special occasion.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb lobster meat, cooked and chopped
  • 1 lb crab meat, picked over for shells
  • 1 quart seafood stock
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup white wine
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the Seafood: If using raw shrimp and lobster, cook them in boiling water until opaque. Set aside.
  2. Make the Base: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
  3. Add Liquid Ingredients: Stir in the white wine, allowing it to reduce by half. Mix in the tomato paste and paprika.
  4. Incorporate Stock: Pour in the seafood stock and bring to a gentle boil.
  5. Blend the Soup: If desired, blend the mixture for a smoother texture using an immersion blender or cool slightly and blend in batches in a blender.
  6. Finish with Seafood and Cream: Return the soup to the pot over low heat. Stir in the heavy cream, followed by the shrimp, lobster, and crab meat. Allow to heat through without boiling.
  7. Season and Serve: Season with salt and pepper. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, you can add a splash of brandy to the soup along with the wine.
  • If you prefer a thicker bisque, thicken with a roux or cornstarch slurry.
