- 1 lb shrimp, peeled and deveined
- 1 lb lobster meat, cooked and chopped
- 1 lb crab meat, picked over for shells
- 1 quart seafood stock
- 1 cup heavy cream
- 2 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup white wine
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the Seafood: If using raw shrimp and lobster, cook them in boiling water until opaque. Set aside.
- Make the Base: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
- Add Liquid Ingredients: Stir in the white wine, allowing it to reduce by half. Mix in the tomato paste and paprika.
- Incorporate Stock: Pour in the seafood stock and bring to a gentle boil.
- Blend the Soup: If desired, blend the mixture for a smoother texture using an immersion blender or cool slightly and blend in batches in a blender.
- Finish with Seafood and Cream: Return the soup to the pot over low heat. Stir in the heavy cream, followed by the shrimp, lobster, and crab meat. Allow to heat through without boiling.
- Season and Serve: Season with salt and pepper. Garnish with fresh parsley before serving.
Notes
- For a richer flavor, you can add a splash of brandy to the soup along with the wine.
- If you prefer a thicker bisque, thicken with a roux or cornstarch slurry.
