Description

  • 1 cup heavy whipping cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 can (21 oz) cherry pie filling
  • 1 cup fresh cherries, pitted
  • 1/2 cup dark chocolate shavings or chunks

Instructions

  1. Prepare the Cake Batter:
    Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add in the buttermilk, vegetable oil, egg, and vanilla extract. Mix until well combined. Carefully stir in the boiling water until the batter is smooth.

  2. Bake the Cake:
    Pour the batter into the prepared cake pan. Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  3. Prepare the Whipped Cream:
    In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  4. Assemble the Cake:
    Place the cake on a serving plate. Spread a layer of whipped cream over the top. Spoon the cherry pie filling over the whipped cream. Add another layer of whipped cream. Top with fresh cherries and sprinkle with chocolate shavings or chunks.

Notes

  • For extra flavor, drizzle the cake layers with a cherry or kirsch syrup before adding the whipped cream and cherries.
