Key Ingredients for Pistachio Kunafa Chocolate Cookies

Crafting the perfect Pistachio Kunafa Chocolate Cookies is like combining two beloved treats into one delightful experience. Here’s what you’ll need to create these irresistible cookies.

  • Pistachios: Finely chopped pistachios add a delightful crunch and earthy flavor. Opt for unsalted, roasted pistachios to enhance the nutty profile in each bite.

  • Kunafa Noodles: These thin Arab pastry strands bring an authentic twist. When baked, they develop a satisfying texture that’s wonderfully different from regular cookie dough.

  • Dark Chocolate: I recommend using high-quality dark chocolate for a rich flavor. The bitterness beautifully balances the sweetness of the cookies.

  • Butter: Unsalted butter creates a rich base for your cookies. It also lends a soft texture, ensuring they remain both chewy and delightful.

  • Sugar: A mix of granulated and brown sugar provides sweetness and depth. Brown sugar enhances moisture, giving the cookies a softer chew.

  • Eggs: Essential for binding and structure, eggs keep our cookies fluffy. Room temperature eggs blend better into the batter, yielding a smoother texture.

  • Flour: All-purpose flour is your go-to for this recipe. It gives the cookies their rich base while allowing the unique flavors to shine.

Choose Quality Ingredients

  • Pistachios: Opt for unsalted, high-quality pistachios. They not only contribute to the flavor but also the crunch. Lightly toast them before adding for an enhanced aroma and taste.

  • Kunafa Dough: Make sure to break the kunafa dough into fine pieces for even distribution. This will ensure each cookie has a delightful crispy texture.

  • Chocolate: Dark chocolate chips are a game-changer in this recipe. They balance the sweetness of the cookies with their rich, bittersweet notes.

Mastering the Technique

  • Mixing: Be gentle when folding in the kunafa and pistachios into the dough. You want to maintain some of the airiness for that tender texture we all love.

  • Chilling the Dough: For the best results, chill your dough for about 30 minutes before baking. This helps control the spread, allowing the cookies to hold their shape beautifully.

Baking Wisdom

  • Oven Calibration: Ensure your oven is preheated to the correct temperature. An oven thermometer can be particularly useful, as even slight deviations can affect the final product.

  • Baking Time: Keep an eye on the cookies as they bake; they can turn from perfectly golden to overdone in just a minute. Remove them when they’re lightly golden and allow them to cool on the baking sheet before transferring to a wire rack.

With these tips in mind, you’ll create luscious Pistachio Kunafa Chocolate Cookies that are destined to impress. Happy baking!

Delicious cookies filled with pistachio kunafa and chocolate chunks, perfect for any occasion!

Ingredients

Scale
  • 1 cup (90gm) kunafa pastry
  • 1 Tbsp butter or ghee, for roasting kunafa dough
  • 3/4 cup (200gm) pistachio spread
  • 2 Tbsp Tahini (optional)
  • 114gm unsalted butter
  • 1 teaspoon espresso or instant coffee powder
  • 1 cup brown sugar, packed
  • 2 tsp vanilla extract
  • 1 egg, room temperature
  • 1/3 cup cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk or semi-sweet chocolate chunks

Instructions

  1. Shred the Kunafa pastry either in a food processor or using a pair of scissors into approximately 1-2cms in length. In a large frying pan, add in butter or ghee and once it is melted, add in the shredded kunafa. Keep stirring until it gets a beautifully roasted golden-brown colour. Remove from heat, let it cool and then transfer to a mixing bowl.
  2. Stir well using a large spoon or spatula and then refrigerate for 10 minutes for it to slightly solidify.
  3. Make the balls using hands or a small cookie scooper. Freeze the balls for at least 15 mins or until ready with the cookie dough.
  4. In a small heavy bottomed saucepan, add in your butter on medium heat. Stir constantly until the butter is melted, starts to foam and turns into a light golden brown colour. Immediately remove from heat and transfer to a mixing bowl.
  5. Mix in brown sugar, whisk until the sugar dissolves well into the butter, and add vanilla extract and egg. Whisk well for a minute or two.
  6. Using a spatula, fold the dry ingredients into the wet batter until no streaks of flour remain.
  7. Remove the Pistachio Kunafa balls from the freezer. Cover the balls with a layer of cookie dough, ensuring the filling is not visible and evenly covered. Continue until all balls are covered with cookie dough.
  8. Top with chocolate chunks. Let cookies cool properly for at least 20-25 mins before serving.
  9. For an enhanced look, drizzle melted pistachio spread on top, serve and enjoy!
