Description

This flavorful cilantro lime chicken dish is perfect for a quick weeknight dinner, combining tender chicken breasts, aromatic rice, and fresh cilantro.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice
  • 2 cups low-sodium chicken broth
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Pat chicken dry and season both sides with salt, pepper, cumin, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes until golden brown.
  3. Flip the chicken, reduce heat slightly, add minced garlic and rice around it. Cook for 1-2 minutes until fragrant.
  4. Pour in chicken broth and lime juice; bring to a gentle simmer.
  5. Cover and cook on low heat for about 20 minutes or until rice is tender and liquid absorbed.
  6. Stir in chopped cilantro before serving; garnish with lime wedges.

Notes

  • You can substitute brown rice for a healthier option, but increase the cooking time.
