- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1/4 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice
- 2 cups low-sodium chicken broth
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Pat chicken dry and season both sides with salt, pepper, cumin, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes until golden brown.
- Flip the chicken, reduce heat slightly, add minced garlic and rice around it. Cook for 1-2 minutes until fragrant.
- Pour in chicken broth and lime juice; bring to a gentle simmer.
- Cover and cook on low heat for about 20 minutes or until rice is tender and liquid absorbed.
- Stir in chopped cilantro before serving; garnish with lime wedges.
Notes
- This dish goes great with lime wedges for extra flavor.
- You can substitute brown rice for a healthier option, but increase the cooking time.
