Description

This delicious Neapolitan Layered Cake combines chocolate, vanilla, and strawberry layers with a creamy frosting.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 tablespoons cocoa powder
  • 1 tablespoon milk
  • 2 tablespoons strawberry puree or syrup
  • A few drops of pink or red food coloring (optional)
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, cream the butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. Gradually add flour mixture alternately with milk, beginning and ending with flour. Mix until just combined.
  3. Divide the batter evenly into three portions.
  4. Add cocoa powder and milk to one portion of the batter. Mix until smooth. Pour into one of the prepared pans.
  5. Add strawberry puree and food coloring (if using) to the second portion of the batter. Mix until smooth. Pour into another prepared pan.
  6. Leave the third portion of the batter plain. Pour into the remaining prepared pan.
  7. Bake all three layers for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  8. In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Place the chocolate layer on a serving plate and spread a layer of whipped cream frosting on top. Add the vanilla layer and spread more frosting. Top with the strawberry layer and cover the entire cake with the remaining whipped cream.

  • You can enhance flavors by adding chopped chocolate chips to the chocolate layer or fresh diced strawberries to the strawberry layer.
