Description

A delicious and hearty mushroom omelette packed with flavors and nutrients.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon chopped garlic
  • 1 cup chopped onions
  • 7 ounces sliced mushrooms (200 g)
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper powder
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup chopped spinach (divided)
  • 6 large eggs
  • 3 teaspoons milk (divided)
  • ¾ teaspoon salt (divided)

Instructions

  1. Heat olive oil in a wide pan over medium-high heat.
  2. Once the oil is hot, add garlic and fry for 20-30 seconds.
  3. Add onions and fry until they turn pink in color, stirring frequently.
  4. Now add mushrooms and cook for 5-6 minutes, stirring frequently while cooking.
  5. Add parsley, salt, and black pepper to the pan and mix well.
  6. Cook until the mushrooms are dried, stirring frequently.
  7. Remove the pan from the heat and set it aside.
  8. While the mushrooms are cooking, whisk 2 eggs in a small mixing bowl using a small wire whisk or a fork.
  9. Add 1 teaspoon milk and ¼ teaspoon salt to the bowl and whisk well.
  10. Heat a 6-inch non-stick pan over medium-low heat and lightly brush the pan with oil.
  11. Pour the whisked eggs into the pan.
  12. Cover the pan with a lid and cook undisturbed until the eggs are 90% cooked.
  13. Remove the lid and keep 2-3 tablespoons of mushroom filling on one-half of the eggs. Keep some chopped spinach and grated cheese on top.
  14. Fold the omelette in half using a rubber spatula.
  15. Transfer to a serving plate and serve hot.
  16. Make the other omelettes in the same manner.

Notes

  • This recipe can easily be adjusted to include your favorite vegetables or herbs.
  • For a vegetarian-friendly option, you can skip the cheese or use a non-dairy substitute.
