Description
A delicious and hearty mushroom omelette packed with flavors and nutrients.
Ingredients

- 2 tablespoons extra virgin olive oil
- 1 teaspoon chopped garlic
- 1 cup chopped onions
- 7 ounces sliced mushrooms (200 g)
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon black pepper powder
- 1 cup shredded cheddar cheese (divided)
- 1 cup chopped spinach (divided)
- 6 large eggs
- 3 teaspoons milk (divided)
- ¾ teaspoon salt (divided)
Instructions
- Heat olive oil in a wide pan over medium-high heat.
- Once the oil is hot, add garlic and fry for 20-30 seconds.
- Add onions and fry until they turn pink in color, stirring frequently.
- Now add mushrooms and cook for 5-6 minutes, stirring frequently while cooking.
- Add parsley, salt, and black pepper to the pan and mix well.
- Cook until the mushrooms are dried, stirring frequently.
- Remove the pan from the heat and set it aside.
- While the mushrooms are cooking, whisk 2 eggs in a small mixing bowl using a small wire whisk or a fork.
- Add 1 teaspoon milk and ¼ teaspoon salt to the bowl and whisk well.
- Heat a 6-inch non-stick pan over medium-low heat and lightly brush the pan with oil.
- Pour the whisked eggs into the pan.
- Cover the pan with a lid and cook undisturbed until the eggs are 90% cooked.
- Remove the lid and keep 2-3 tablespoons of mushroom filling on one-half of the eggs. Keep some chopped spinach and grated cheese on top.
- Fold the omelette in half using a rubber spatula.
- Transfer to a serving plate and serve hot.
- Make the other omelettes in the same manner.
Notes
- This recipe can easily be adjusted to include your favorite vegetables or herbs.
- For a vegetarian-friendly option, you can skip the cheese or use a non-dairy substitute.
