Description

A delicious and chewy glutinous rice cake flavored with coconut and citrus zest.


Ingredients

  • 2 cups Glutinous Rice Flour
  • 1 cup Sugar
  • 3 large Eggs
  • 1 cup Coconut Milk
  • 1 teaspoon Baking Powder
  • 1/2 cup Butter
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Sesame Seeds
  • 1 tablespoon Citrus Zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish thoroughly.
  2. Whisk together the eggs and sugar in a large bowl until well combined.
  3. Mix in melted butter or oil, followed by the coconut milk, until smooth.
  4. Gradually add the glutinous rice flour and baking powder, stirring until a thick batter forms.
  5. Pour the batter into the prepared dish and spread evenly.
  6. Bake for 30-40 minutes until golden.
  7. Cool the cake slightly in the dish before slicing for serving.

Notes

  • For a richer flavor, substitute half of the coconut milk with whole milk.
