- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
- 1 1/2 cups brown sugar
- 2 large eggs
- 2 cups unsweetened applesauce
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream the butter and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each. Stir in applesauce, buttermilk, and vanilla.
- Gradually add the dry ingredients into the wet mixture until just combined. Fold in walnuts and raisins if using.
- Pour batter into the prepared baking dish and smooth the top.
- Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan before slicing and serving.
