A delicious and crunchy snack made with roasted makhana, vegetables, and chutneys.
Ingredients

- 2 teaspoons oil
- 3 cups makhana (fox nuts, lotus seeds)
- ½ cup chopped red onions
- ½ cup chopped tomatoes
- 1 teaspoon chopped green chilies
- 3 tablespoons chopped cilantro
- ½ cup boiled and cubed potatoes (¼ inch cubes)
- 2 tablespoons roasted peanuts
- 3 teaspoons green chutney
- 3 teaspoons tamarind chutney
- ½ teaspoon salt
- ½ teaspoon Kashmiri red chili powder
- 1 teaspoon chaat masala
- 1 tablespoon freshly squeezed lime juice
Instructions
- Heat oil in a pan over medium heat.
- Add makhana and roast for 5-6 minutes, stirring continuously until crispy.
- Cool the roasted makhana for 5 minutes.
- In a large bowl, combine onions, tomatoes, green chilies, cilantro, potatoes, and roasted peanuts.
- Add green chutney, tamarind chutney, salt, chili powder, chaat masala, and lime juice, and mix gently.
- Add the roasted makhana to the bowl and toss lightly.
- Top with fine sev and serve immediately to keep the makhana crunchy.
Notes
- For best results, serve the dish immediately after preparation to maintain the crunchiness of the makhana.
