Description

A delicious and crunchy snack made with roasted makhana, vegetables, and chutneys.


Ingredients

  • 2 teaspoons oil
  • 3 cups makhana (fox nuts, lotus seeds)
  • ½ cup chopped red onions
  • ½ cup chopped tomatoes
  • 1 teaspoon chopped green chilies
  • 3 tablespoons chopped cilantro
  • ½ cup boiled and cubed potatoes (¼ inch cubes)
  • 2 tablespoons roasted peanuts
  • 3 teaspoons green chutney
  • 3 teaspoons tamarind chutney
  • ½ teaspoon salt
  • ½ teaspoon Kashmiri red chili powder
  • 1 teaspoon chaat masala
  • 1 tablespoon freshly squeezed lime juice

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add makhana and roast for 5-6 minutes, stirring continuously until crispy.
  3. Cool the roasted makhana for 5 minutes.
  4. In a large bowl, combine onions, tomatoes, green chilies, cilantro, potatoes, and roasted peanuts.
  5. Add green chutney, tamarind chutney, salt, chili powder, chaat masala, and lime juice, and mix gently.
  6. Add the roasted makhana to the bowl and toss lightly.
  7. Top with fine sev and serve immediately to keep the makhana crunchy.

Notes

  • For best results, serve the dish immediately after preparation to maintain the crunchiness of the makhana.
