Description
Delicious strawberry jam sandwich cookies made with a buttery, spiced dough.
Ingredients

- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 2 tbsp confectioners’ sugar
- 1/8 tsp salt
- 1/8 tsp ground cinnamon
- 1/2 cup butter, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1/2–1 cup seedless strawberry jam
Instructions
- In a medium bowl, combine the flour, baking powder, confectioners’ sugar, cinnamon, and salt.
- Add the butter and granulated sugar to the stand mixer and beat until fluffy.
- Mix in the vanilla extract and egg until fully combined.
- Reduce the mixer speed to low and gradually add the dry mixture until just combined.
- Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 2 hours.
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- Roll out the dough to about ⅛-inch thick and cut out dough rounds.
- Transfer the cookies to the baking sheets and bake until pale golden, about 8-10 minutes.
- Cool on wire racks until completely cooled.
- Heat the strawberry jam in a saucepan, then spread it on the uncut cookies and top with the cutout cookies to assemble sandwiches.
Notes
- For best results, refrigerate the dough overnight.
- Feel free to substitute other flavors of jam for a different taste.
