Delicious roasted gnocchi tossed with cherry tomatoes and zucchini, topped with melted Parmesan.
Ingredients

- 1 lb store-bought gnocchi
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced
- 2 tbsp extra-virgin olive oil
- Zest of 1 lemon
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place the gnocchi, cherry tomatoes, and zucchini on the baking sheet.
- Drizzle with olive oil and sprinkle with salt, pepper, Italian seasoning, and lemon zest. Toss to coat evenly.
- Roast for 20-25 minutes until golden brown and fragrant.
- Remove from the oven, sprinkle with Parmesan cheese, and return to the oven for an additional 5 minutes until melted.
- Squeeze fresh lemon juice over the top before serving.
Notes
- For a spicy kick, consider adding red pepper flakes.
- Use fresh lemon juice for the best flavor.
