Description

Delicious fluff pancakes made with Greek yogurt and lemon zest.


Ingredients

  • 2 large eggs
  • 2 tbsp melted butter

  • 1 tbsp lemon zest
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ¼ tsp salt

Instructions

  1. Whisk Greek yogurt, eggs, melted butter, lemon juice, and lemon zest together until smooth.
  2. Add flour, sugar, baking powder, and salt. Mix gently — the batter should be thick and fluffy.
  3. Heat a lightly buttered nonstick pan over medium-low heat.
  4. Scoop about ¼ cup batter per pancake and cook 2–3 minutes per side until golden.
  5. Serve warm with maple syrup, honey, berries, or a sprinkle of extra zest.
