- 1 cup Greek yogurt
- 2 large eggs
- 2 tbsp melted butter
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ¼ tsp salt
Instructions
- Whisk Greek yogurt, eggs, melted butter, lemon juice, and lemon zest together until smooth.
- Add flour, sugar, baking powder, and salt. Mix gently — the batter should be thick and fluffy.
- Heat a lightly buttered nonstick pan over medium-low heat.
- Scoop about ¼ cup batter per pancake and cook 2–3 minutes per side until golden.
- Serve warm with maple syrup, honey, berries, or a sprinkle of extra zest.
Notes
- Make sure the batter is not overmixed for fluffier pancakes.
- Adjust the cooking time based on your stove’s heat settings.
