Ingredients

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.

  3. In another bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Incorporate lemon zest and juice into the mixture.
  5. Gradually add dry ingredients to wet ingredients, alternating with milk until just combined.
  6. Fill muffin cups two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. For the frosting, beat cream cheese with powdered sugar and vanilla extract until smooth; frost cooled cupcakes.
