- 2 cups fresh mushrooms (cremini or shiitake), chopped
- 3 cloves garlic, minced
- 2 tbsp unsalted butter
- 2 cups low-sodium vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Prepare Your Ingredients: Chop the mushrooms and parsley, and mince the garlic.
- Sauté the Aromatics: In a skillet over medium heat, melt butter. Add garlic and sauté for 30 seconds until fragrant.
- Cook the Mushrooms: Add chopped mushrooms and cook for 5-7 minutes until golden brown.
- Add the Orzo: Stir in orzo and vegetable broth; bring to a gentle boil. Reduce heat to low and simmer uncovered for about 10-12 minutes until al dente.
- Stir in Cheese and Parsley: Remove from heat and mix in Parmesan cheese and parsley until creamy.
- Serve Warm: Plate the dish hot, garnished with extra parsley if desired.
Notes
- For a richer flavor, you can add a splash of white wine when sautéing the mushrooms.
