Description
A delicious cheesy beef bake with layers of tortilla chips, seasoned beef, and melted cheese.
Ingredients

- 1 lb lean ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, rinsed
- 1 cup bell peppers, chopped (mixed colors)
- 2 cups tortilla chips
- 2 cups shredded cheddar and Monterey Jack cheese
- 1 cup sour cream
- Fresh cilantro for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef until fully cooked.
- Stir in the taco seasoning and add black beans and bell peppers; cook for 3-5 minutes until heated through.
- Layer half of the tortilla chips in a 9×13 inch baking dish. Top with half of the beef mixture and half of the cheese.
- Repeat layers with remaining ingredients.
- Bake uncovered for 20-25 minutes until bubbly and golden brown.
- Let cool slightly, then top with sour cream and fresh cilantro before serving.
Notes
- For added flavor, consider topping with additional spices or hot sauce.
- Can be prepared ahead of time and baked when ready to serve.
