A delicious and easy corn casserole made with sweet corn, creamed corn, cheese, and Jiffy mix.

- 2 cups canned sweet corn, drained
- 1 cup creamed corn
- 2 cups shredded sharp cheddar cheese
- 1 cup sour cream (or Greek yogurt)
- 1 box (8 oz) Jiffy Corn Muffin Mix
- 1/2 cup unsalted butter, melted
- 1/4 cup chopped green onions (reserve some for garnish)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a medium baking dish.
- In a large bowl, mix together canned corn, creamed corn, cheddar cheese, sour cream, Jiffy mix, melted butter, and chopped green onions until well combined.
- Season with salt and pepper to your liking and stir again.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 45-50 minutes until golden brown on top and bubbling around the edges.
- Let cool for 10 minutes before serving; garnish with reserved green onions.
Notes
- This dish can be made ahead of time and baked just before serving.
- For a spicier version, add diced jalapeños.
