- 1 lb ground turkey (93% lean)
- 1 cup enchilada sauce (store-bought or homemade)
- 1 cup bell peppers (chopped, mixed colors)
- 1 medium onion (chopped)
- 1 cup corn (canned or frozen)
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- Prepare your ingredients by chopping bell peppers and onion.
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion and bell peppers for about 5 minutes until softened.
- Add ground turkey to the skillet, breaking it apart as it cooks. Season with cumin and chili powder; cook for about 7 minutes until fully cooked.
- Stir in corn and pour in enchilada sauce. Let it simmer for 5 minutes.
- Top with shredded cheese, cover with a lid, and let melt for about 3 minutes.
- Serve hot directly from the skillet, garnished with fresh cilantro or avocado if desired.
