Ingredients

  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, crushed
  • 3 tbsp honey
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp sesame seeds (for garnish)

Instructions

  1. In a medium bowl, whisk together ginger, garlic, honey, soy sauce, and sesame oil to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  3. Preheat your grill to medium-high heat (400°F/200°C). Soak wooden skewers in water if using.
  4. Thread marinated chicken onto skewers with space between each piece. Sprinkle with sesame seeds.
  5. Grill skewers for 10-15 minutes, turning occasionally until the internal temperature reaches 165°F (74°C) and they are nicely charred.
  6. Serve hot off the grill with extra marinade drizzled on top if desired.
