Description

A delicious roast chicken recipe with a flavorful miso butter rub.


Ingredients

  • 1 whole chicken (45 pounds)
  • 1/2 cup white miso paste
  • 1/2 cup unsalted butter, softened
  • 4 garlic cloves, minced
  • 2 tablespoons fresh thyme or rosemary, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare a roasting pan.
  2. Rinse the chicken under cool water and pat dry; place breast-side up in the pan.
  3. In a bowl, mix together softened butter, miso paste, minced garlic, and herbs until smooth.
  4. Rub the miso butter mixture all over the chicken, ensuring to get under the skin.
  5. Pour soy sauce and lemon juice over the chicken and roast for about 1 hour and 15 minutes, basting occasionally until it reaches an internal temperature of at least 165°F (75°C).
  6. Let rest for 10 minutes before carving and serving.
