A delicious roast chicken recipe with a flavorful miso butter rub.

- 1 whole chicken (4–5 pounds)
- 1/2 cup white miso paste
- 1/2 cup unsalted butter, softened
- 4 garlic cloves, minced
- 2 tablespoons fresh thyme or rosemary, chopped
- 1/4 cup low-sodium soy sauce
- 2 tablespoons fresh lemon juice
Instructions
- Preheat the oven to 425°F (220°C) and prepare a roasting pan.
- Rinse the chicken under cool water and pat dry; place breast-side up in the pan.
- In a bowl, mix together softened butter, miso paste, minced garlic, and herbs until smooth.
- Rub the miso butter mixture all over the chicken, ensuring to get under the skin.
- Pour soy sauce and lemon juice over the chicken and roast for about 1 hour and 15 minutes, basting occasionally until it reaches an internal temperature of at least 165°F (75°C).
- Let rest for 10 minutes before carving and serving.

- This recipe can be complemented with roasted vegetables.
