- 3 lbs chicken thighs (bone-in, skin-on)
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- In a mixing bowl, whisk together Dijon mustard, honey, garlic, olive oil, salt, pepper, and paprika until well combined.
- Place chicken thighs in a resealable plastic bag or a dish and pour the marinade over them. Coat well and refrigerate for at least 30 minutes or up to 24 hours.
- Preheat oven to 400°F (200°C). Arrange marinated chicken thighs skin-side up on a baking sheet or oven-safe skillet.
- Bake for 35–40 minutes, or until the internal temperature of the chicken reaches 165°F and the skin is golden.
- For crispier skin, broil for an additional 2–3 minutes, watching carefully.
- Let chicken rest for 5 minutes before serving. Spoon pan juices over the top if desired.
