- 2 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Combine Ingredients – In a medium saucepan, stir together the blueberries, sugar, and 1/4 cup of the water. If you’re using frozen berries, there’s no need to thaw them—just toss them right in.
- Simmer the Mixture – Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally, letting the sugar dissolve and the blueberries release their juices. The berries will begin to soften and burst, creating a luscious sauce base.
- Thicken the Sauce – In a small bowl, whisk together the remaining 1/4 cup water with the cornstarch to make a smooth slurry. Slowly pour this into the blueberry mixture, stirring constantly.
- Add Freshness and Flavor – Keep cooking the sauce for about 1–2 more minutes, until it thickens to your desired consistency. It should be glossy and coat the back of a spoon. Stir in the lemon juice and vanilla extract, then remove from heat.
- Serve or Store – Let it cool slightly before using. This sauce is delicious warm, room temperature, or chilled. Pour it over pancakes, ice cream, or cheesecake—or just eat it by the spoonful.
