Instructions

- Prepare Wet Ingredients – In another large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine Ingredients – Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined.
- Fill the Liners – Spoon the batter into the cupcake liners, filling them about two-thirds full.
- Bake – Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Prepare Frosting – In a large bowl, beat the heavy cream until it starts to thicken. Gradually add powdered sugar and continue to beat until soft peaks form. Stir in the peppermint extract.
- Frost the Cupcakes – Once cupcakes are completely cooled, frost them generously using a pastry bag fitted with your favorite tip.
