Description

A hearty turkey chili loaded with vegetables and flavor.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) black beans, rinsed
  • 2 bell peppers (mixed colors), diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 can (14 oz) diced tomatoes
  • 2 cups low-sodium vegetable broth
  • 1 cup corn (optional)

Instructions

  1. Prepare your ingredients by chopping the veggies into bite-sized pieces.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté onions and garlic until fragrant and translucent (about 3-4 minutes).
  3. Add ground turkey to the pot. Cook until browned (5-7 minutes), breaking it apart with a spatula.
  4. Stir in bell peppers, diced tomatoes, and corn (if using). Cook for another 3-4 minutes until softened.
  5. Sprinkle in chili powder and cumin, stirring well to coat everything evenly for about 1 minute.
  6. Pour in black beans and vegetable broth; bring to a gentle simmer. Cover partially and cook for 20-25 minutes, stirring occasionally.
