A hearty turkey chili loaded with vegetables and flavor.
Ingredients

- 1 lb ground turkey
- 1 can (15 oz) black beans, rinsed
- 2 bell peppers (mixed colors), diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 can (14 oz) diced tomatoes
- 2 cups low-sodium vegetable broth
- 1 cup corn (optional)
Instructions
- Prepare your ingredients by chopping the veggies into bite-sized pieces.
- In a large pot over medium heat, add a splash of olive oil. Sauté onions and garlic until fragrant and translucent (about 3-4 minutes).
- Add ground turkey to the pot. Cook until browned (5-7 minutes), breaking it apart with a spatula.
- Stir in bell peppers, diced tomatoes, and corn (if using). Cook for another 3-4 minutes until softened.
- Sprinkle in chili powder and cumin, stirring well to coat everything evenly for about 1 minute.
- Pour in black beans and vegetable broth; bring to a gentle simmer. Cover partially and cook for 20-25 minutes, stirring occasionally.
Notes
- This chili can be served with cornbread or over rice.
- Leftovers can be refrigerated for up to 3 days.
