Description

This flavorful Cajun rice dish is packed with vegetables and seasoned to perfection.


Ingredients

  • 2 cups long grain rice
  • 3 cups chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced tomatoes
  • 2 tablespoons chopped green onions

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion, green bell pepper, and red bell pepper and sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add rice and stir to coat with the oil and vegetables.
  5. Pour in chicken broth, diced tomatoes, Cajun seasoning, smoked paprika, cayenne, thyme, oregano, salt, and black pepper and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 18 to 20 minutes until rice is tender and liquid is absorbed.
  7. Fluff rice with a fork and stir in chopped green onions.
  8. Serve hot, garnished with extra green onions if desired.

Notes

  • This recipe can be customized with your choice of vegetables.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Make sure to rinse the rice before cooking for better texture.
