This flavorful Cajun rice dish is packed with vegetables and seasoned to perfection.
Ingredients

- 2 cups long grain rice
- 3 cups chicken broth
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced tomatoes
- 2 tablespoons chopped green onions
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion, green bell pepper, and red bell pepper and sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add rice and stir to coat with the oil and vegetables.
- Pour in chicken broth, diced tomatoes, Cajun seasoning, smoked paprika, cayenne, thyme, oregano, salt, and black pepper and bring to a boil.
- Reduce heat to low, cover, and simmer for 18 to 20 minutes until rice is tender and liquid is absorbed.
- Fluff rice with a fork and stir in chopped green onions.
- Serve hot, garnished with extra green onions if desired.
Notes
- This recipe can be customized with your choice of vegetables.
- For a vegetarian version, substitute chicken broth with vegetable broth.
- Make sure to rinse the rice before cooking for better texture.
