Description

This baked feta pasta is a delicious and creamy dish loaded with fresh vegetables and flavor.


Ingredients

Scale
  • 200g Pasta (penne or fusilli)
  • 200g Feta Cheese
  • 2 cups Cherry Tomatoes
  • 1 cup Spinach
  • 1 Bell Pepper (diced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place cherry tomatoes, diced bell pepper, and minced garlic in a baking dish.
  3. Toss with olive oil and season with salt and pepper.
  4. Add the block of feta cheese in the center of the vegetable mix.
  5. Bake for about 30 minutes until tomatoes are blistered and feta is creamy.
  6. Cook the pasta according to package instructions until al dente.
  7. Add the pasta to the baking dish with the roasted vegetables and feta.
  8. Stir in the fresh spinach and mix well until combined.
  9. Serve hot, garnished with fresh basil.
