Scale
- 6 slices brioche or thick white bread
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1 kiwifruit, peeled and sliced
- 1 mango, peeled and diced
- 1/2 cup raspberries
- 1 cup whipped cream or mascarpone cheese
- 2 tablespoons unsalted butter
- Maple syrup, for drizzling
- Powdered sugar, for dusting
- Fresh mint leaves, for garnish
Instructions
- Prepare the Batter: In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
- Soak the Bread: Dip each slice of bread into the egg mixture, ensuring both sides are well-coated.
- Cook the French Toast: In a skillet, melt the butter over medium heat. Cook each slice of soaked bread for 3-4 minutes on each side until golden brown.
- Assemble the Toast: Place one slice of French toast on a serving plate. Spread a layer of whipped cream or mascarpone. Add a mix of strawberries, blueberries, kiwi, mango, and raspberries. Place another slice of French toast on top and repeat the layers. Top with a final slice of French toast.
- Finish and Serve: Drizzle the stack with maple syrup. Dust with powdered sugar. Garnish with fresh mint leaves.
Notes
- Use day-old bread for best absorption of the egg mixture.
- Customize the fruit selection based on seasonal availability.
- For a richer flavor, substitute milk with half-and-half.
- Serve immediately to maintain the crispness of the toast.
