Description

A delicious twist on French toast, layered with fresh fruits and topped with whipped cream.

Ingredients

Scale
  • 6 slices brioche or thick white bread
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1 kiwifruit, peeled and sliced
  • 1 mango, peeled and diced
  • 1/2 cup raspberries
  • 1 cup whipped cream or mascarpone cheese
  • 2 tablespoons unsalted butter
  • Maple syrup, for drizzling
  • Powdered sugar, for dusting
  • Fresh mint leaves, for garnish

Instructions

  1. Prepare the Batter: In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Soak the Bread: Dip each slice of bread into the egg mixture, ensuring both sides are well-coated.
  3. Cook the French Toast: In a skillet, melt the butter over medium heat. Cook each slice of soaked bread for 3-4 minutes on each side until golden brown.
  4. Assemble the Toast: Place one slice of French toast on a serving plate. Spread a layer of whipped cream or mascarpone. Add a mix of strawberries, blueberries, kiwi, mango, and raspberries. Place another slice of French toast on top and repeat the layers. Top with a final slice of French toast.
  5. Finish and Serve: Drizzle the stack with maple syrup. Dust with powdered sugar. Garnish with fresh mint leaves.

Notes

  • Use day-old bread for best absorption of the egg mixture.
  • Customize the fruit selection based on seasonal availability.
  • For a richer flavor, substitute milk with half-and-half.
  • Serve immediately to maintain the crispness of the toast.
