Instructions
- Prepare the Batter: In a bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, egg, melted butter, and vanilla extract. Combine the wet and dry ingredients, stirring until just combined. Do not overmix.
- Prepare the Topping: Heat a large skillet or griddle over medium heat. Melt a tablespoon of butter and sprinkle a tablespoon of brown sugar evenly in the pan. Place a pineapple ring on the melted sugar and put a cherry in the center.
- Cook the Pancakes: Pour about 1/4 cup of batter over the pineapple ring, spreading gently to cover. Cook until bubbles form on the surface, about 2-3 minutes. Carefully flip and cook another 2-3 minutes until golden and cooked through. Repeat with remaining batter and fruit, adding more butter and sugar as needed.
- Serve: Dust the pancakes with powdered sugar.
