- 4 cups fresh kale, chopped
- 1 can (15 oz) chickpeas, rinsed and drained
- 2 tablespoons olive oil, divided
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup Caesar dressing (store-bought or homemade)
- 1 teaspoon garlic powder
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chickpeas dry and toss them in a bowl with 1 tablespoon olive oil, garlic powder, salt, and pepper until evenly coated.
- Spread the chickpeas on a baking sheet lined with parchment paper and roast for 20-25 minutes until crispy.
- In a separate bowl, drizzle the remaining tablespoon of olive oil over the chopped kale. Massage the leaves to soften them.
- Once the chickpeas are roasted, combine them with the massaged kale in a large bowl. Add Parmesan cheese and Caesar dressing; mix well.
- Serve immediately for optimal crunch.

- For extra flavor, consider adding some crushed red pepper flakes.
