Description

This salad features crispy roasted chickpeas combined with fresh kale, Parmesan cheese, and a zesty Caesar dressing for a delicious and healthy dish.


Ingredients

  • 4 cups fresh kale, chopped
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tablespoons olive oil, divided
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup Caesar dressing (store-bought or homemade)
  • 1 teaspoon garlic powder
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chickpeas dry and toss them in a bowl with 1 tablespoon olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the chickpeas on a baking sheet lined with parchment paper and roast for 20-25 minutes until crispy.
  4. In a separate bowl, drizzle the remaining tablespoon of olive oil over the chopped kale. Massage the leaves to soften them.
  5. Once the chickpeas are roasted, combine them with the massaged kale in a large bowl. Add Parmesan cheese and Caesar dressing; mix well.
