Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 15×10 inch jelly roll pan with parchment paper.
- Make the Sponge Cake: In a large bowl, beat the eggs, granulated sugar, and vanilla extract until thick and pale. In another bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture. Add the orange zest to the mixture and fold until just combined. Gently fold in the cranberries. Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes or until the cake springs back when touched.
- Roll the Cake: Dust a clean kitchen towel with powdered sugar. Turn the cake onto the towel and peel off the parchment paper. Starting at one short side, roll up the cake with the towel. Cool completely.
- Prepare the Filling: Beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Prepare the Frosting: Beat the cream cheese and butter until smooth. Gradually add the powdered sugar, followed by the orange juice. Mix until smooth.
- Assemble the Yule Log: Unroll the cooled cake and spread the whipped cream evenly over the cake. Roll the cake back up without the towel. Place seam side down on a serving tray. Spread the orange frosting over the log, covering it completely.
- Decorate: Garnish with candied orange slices and fresh cranberries.
