Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 10×15 inch (25×38 cm) jelly roll pan with parchment paper and lightly grease it.
- Prepare the Cake Batter: In a large mixing bowl, beat the eggs on high speed for about 5 minutes until thick and pale. Gradually add granulated sugar and continue beating until it’s dissolved. Stir in the vanilla extract. In a separate bowl, sift together flour, baking powder, and salt. Gently fold the dry ingredients into the wet mixture, being careful not to deflate the eggs. Add green food coloring until the desired shade is reached.
- Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes, or until the cake springs back when touched. Remove from oven and immediately invert onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
- Roll the Cake: While warm, roll the cake up with the towel from the short side. Let it cool completely rolled up, about 1 hour.
- Prepare the Whipped Cream Filling: In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the Yule Log: Unroll the cooled cake and spread the whipped cream evenly over the surface. Gently re-roll the cake, without the towel. Place seam side down on a serving platter.
- Decorate: Frost the outside of the roll with additional whipped cream or buttercream if desired. Decorate with Christmas-themed sprinkles. Add edible gold star and ornamental decorations to enhance its festive appearance.
- Final Touch: Dust lightly with powdered sugar for a snowy effect.
