Description

Delicious apple cheesecake cookies filled with a creamy cheesecake center and topped with a cinnamon glaze.


Ingredients

  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups peeled and finely chopped apples (about 2 medium apples)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon ground cinnamon

Instructions

  1. In a medium bowl, prepare the cheesecake filling. Beat the softened cream cheese and 1/4 cup of sugar with an electric mixer until smooth. Add the egg yolk and 1/2 teaspoon of vanilla extract, beating until well combined. Set aside.
  2. In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy. Beat in the egg and 1 teaspoon of vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  4. Gently fold the chopped apples into the cookie dough.
  5. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Scoop about 1 tablespoon of cookie dough and flatten it slightly in your palm. Place about 1 teaspoon of the cheesecake filling in the center. Top with another small scoop of cookie dough and gently seal the edges, forming a ball. Make sure the filling is completely enclosed.
  7. Place the filled cookie balls on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-14 minutes, or until the edges are lightly golden. The centers will still look soft. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the cookies cool, make the cinnamon glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and ground cinnamon. Add the remaining tablespoon of milk if needed to reach a drizzling consistency.
  10. Once the cookies are completely cool, drizzle the cinnamon glaze over the top. Let the glaze set before serving.
