Description

Deliciously rich chocolate cookies with a creamy peanut butter center.


Ingredients

Scale
  • 3/4 cup all purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup granulated sugar
  • 1/2 cup processed peanut butter (not natural)
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. In a medium bowl, whisk together the flour, cocoa, baking powder, and salt.
  2. In a microwave-safe bowl, melt 1/2 cup chocolate chips. Set aside.
  3. In a large mixing bowl, beat together the sugar, 2 tablespoons peanut butter, butter, and vanilla until creamy.
  4. Beat in the melted chocolate chips then beat in the egg.
  5. Gradually beat in the flour mixture. Stir in the remaining 1/2 cup chocolate chips.
  6. Cover and refrigerate for one hour or until firm.
  7. Preheat the oven to 350F. Line two cookie sheets with parchment paper.
  8. Roll the dough into 1 1/2-inch balls. Make a 1/2-inch dent with your thumb into each ball. Fill each with roughly 1/2 teaspoon peanut butter.
  9. Bake 10-12 minutes or until the edges are set.
  10. Cool on the sheets for 2 minutes before removing to a cooling rack.

Notes

  • For a richer flavor, use dark chocolate chips.
  • Ensure the dough is chilled for best results.
