A delicious layered chocolate mocha cake perfect for chocolate lovers.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup brewed coffee, cooled
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for frosting)
  • 1/2 cup mascarpone cheese (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1 tablespoon instant coffee granules (for frosting)
  • Chocolate glaze or ganache (for topping)
  • Optional: Chocolate pieces or decorations for garnish

Instructions

  1. Preheat Oven:
    • Preheat the oven to 350°F (175°C).
    • Grease and flour two 8-inch round cake pans.
  2. Prepare the Cake Batter:
    • In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • In another bowl, combine buttermilk, coffee, vegetable oil, egg, and vanilla extract.
    • Gradually add wet ingredients to the dry ingredients, mixing until just combined.
  3. Bake the Cake:
    • Divide the batter evenly between the prepared cake pans.
    • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the Frosting:
    • In a mixing bowl, beat the heavy cream until soft peaks form.
    • Add mascarpone cheese, powdered sugar, and coffee granules, and continue to beat until well combined.
  5. Assemble the Cake:
    • Place one cake layer on a serving plate and spread a generous amount of frosting on top.
    • Place the second cake layer on top and cover the entire cake with the remaining frosting.
  6. Add Chocolate Glaze:
    • Pour the chocolate glaze or ganache over the top of the cake, allowing it to drip down the sides.
    • Garnish with chocolate pieces or decorations as desired.

Notes

  • Ensure all ingredients are at room temperature for best results.
  • Use quality cocoa powder for a richer chocolate flavor.
  • Chill the bowl and beaters before whipping the cream for quicker and more stable peaks.
  • Adjust the amount of instant coffee to taste, depending on your preference for mocha flavor.
