Instructions
- Preheat Oven:
- Preheat the oven to 350°F (175°C).
- Grease and flour two 8-inch round cake pans.
- Prepare the Cake Batter:
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine buttermilk, coffee, vegetable oil, egg, and vanilla extract.
- Gradually add wet ingredients to the dry ingredients, mixing until just combined.
- Bake the Cake:
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Frosting:
- In a mixing bowl, beat the heavy cream until soft peaks form.
- Add mascarpone cheese, powdered sugar, and coffee granules, and continue to beat until well combined.
- Assemble the Cake:
- Place one cake layer on a serving plate and spread a generous amount of frosting on top.
- Place the second cake layer on top and cover the entire cake with the remaining frosting.
- Add Chocolate Glaze:
- Pour the chocolate glaze or ganache over the top of the cake, allowing it to drip down the sides.
- Garnish with chocolate pieces or decorations as desired.
