Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
- Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk together eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
- Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Add Boiling Water: Carefully stir in boiling water until the batter is smooth. The batter will be thin.
- Fill Cupcake Liners: Pour the batter into the prepared liners, filling each about two-thirds full.
- Bake: Bake in preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow cupcakes to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Prepare Frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla extract, beating on medium speed until the frosting is creamy and smooth.
- Frost Cupcakes: Once the cupcakes are completely cool, frost them with the prepared frosting using a piping bag or a knife.
