Description

Ingredients

  • 1 tsp vanilla extract

  • 200ml heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Canned cherries (drained)
  • 150g dark chocolate, melted
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat the Oven: Set the oven to 180°C (350°F). Line a baking sheet (approximately 10×15 inches) with parchment paper.
  2. Prepare the Batter: In a large bowl, beat the eggs and sugar together until thick and pale. Gently fold in the flour, cocoa powder, vanilla extract, and salt with a spatula, ensuring no lumps remain.
  3. Bake the Cake: Pour the batter into the prepared baking sheet, spreading it evenly. Bake for 10-12 minutes, or until the cake springs back lightly when touched.
  4. Roll the Cake: While the cake is still warm, invert it onto a clean tea towel dusted with cocoa powder. Peel off the parchment paper and roll the cake with the towel from the short side. Let it cool completely.
  5. Prepare the Filling: Whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Carefully unroll the cooled cake and spread a layer of whipped cream over it. Evenly distribute cherries over the cream.
  6. Assemble the Roll: Roll the cake back up without the towel, applying gentle pressure to keep it tight. Drizzle the melted dark chocolate over the roll.
  7. Decorate: Pipe or spread additional whipped cream on top and garnish with chocolate shavings and extra cherries.
