Description

A rich and creamy chocolate cheesecake topped with a luscious ganache and whipped cream.

Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 packs (8 oz each) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1/2 cup sour cream
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 1/2 cup whipped cream for topping
  • 1/4 cup powdered sugar (optional)
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (160°C). In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove and let cool.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with the sugar until smooth and creamy. Add sour cream and vanilla extract, mixing until combined. Add eggs one at a time, beating on low speed after each addition until just blended.
  3. Bake the Cheesecake: Pour the cream cheese mixture over the cooled crust. Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside to cool slowly for about 1 hour. Remove from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours or overnight.
  4. Make the Chocolate Ganache: In a small saucepan, heat heavy cream over medium heat until simmering. Remove from heat and add chopped dark chocolate. Let it sit for a minute, then stir until smooth. Allow the ganache to cool slightly, then pour over the chilled cheesecake.
  5. Prepare the Whipped Cream Topping: In a mixing bowl, combine whipped cream, powdered sugar, and vanilla extract. Beat until soft peaks form.
  6. Assemble and Serve: Decorate the cheesecake with whipped cream swirls. Slice and serve chilled.

Notes

  • Ensure cream cheese is fully softened for a smooth filling.
  • Use a water bath while baking to prevent cracks in the cheesecake.
  • Allow the ganache to cool slightly before pouring to avoid melting the cheesecake surface.
  • For best results, prepare the cheesecake a day in advance to allow flavors to meld.
