Instructions
- Prepare the Crust: Preheat the oven to 325°F (160°C). In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove and let cool.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with the sugar until smooth and creamy. Add sour cream and vanilla extract, mixing until combined. Add eggs one at a time, beating on low speed after each addition until just blended.
- Bake the Cheesecake: Pour the cream cheese mixture over the cooled crust. Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside to cool slowly for about 1 hour. Remove from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours or overnight.
- Make the Chocolate Ganache: In a small saucepan, heat heavy cream over medium heat until simmering. Remove from heat and add chopped dark chocolate. Let it sit for a minute, then stir until smooth. Allow the ganache to cool slightly, then pour over the chilled cheesecake.
- Prepare the Whipped Cream Topping: In a mixing bowl, combine whipped cream, powdered sugar, and vanilla extract. Beat until soft peaks form.
- Assemble and Serve: Decorate the cheesecake with whipped cream swirls. Slice and serve chilled.
