Description

A rich and indulgent layered cake featuring chocolate, caramel, and whipped cream.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter, cubed
  • ½ cup heavy cream (for caramel)
  • 1 tsp vanilla extract (for caramel)
  • Pinch of salt (for caramel)
  • 4 oz dark chocolate, chopped
  • ½ cup heavy cream (for ganache)
  • 2 cups heavy whipping cream (for frosting)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • Chocolate shards or pieces (for decoration)
  • Caramel candies, crushed (for decoration)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add Wet Ingredients: Add eggs, vegetable oil, vanilla extract, and buttermilk to the dry mixture. Mix until smooth.
  4. Bake: Pour the batter into the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
  5. Melt Sugar: In a saucepan over medium heat, melt sugar until it becomes a deep amber color.
  6. Add Butter and Cream: Add butter and stir until melted. Slowly add heavy cream and vanilla, whisking continuously. Add salt. Let it cool.
  7. Heat Cream: Heat heavy cream until it begins to simmer.
  8. Combine with Chocolate: Pour heated cream over chopped chocolate. Let sit for 5 minutes, then stir until smooth. Cool slightly.
  9. Whip Ingredients: In a large mixing bowl, combine heavy cream, powdered sugar, and vanilla. Beat until stiff peaks form.
  10. Layer Cake: Place one cake layer on a serving plate. Spread a layer of caramel sauce followed by whipped cream frosting.
  11. Repeat Layers: Add the second cake layer. Spread more caramel sauce, then cover with whipped cream.
  12. Finish with Toppings: Drizzle ganache over the top. Scatter chocolate shards and crushed caramel candies.

Notes

  • Caramel Risks: Be cautious when making caramel, as sugar can burn easily.
  • Frosting: Ensure the cake is completely cooled before frosting to avoid melting.
  • Ganache: Adjust consistency by adding more chocolate for thickness or more cream for thinness.
