Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add Wet Ingredients: Add eggs, vegetable oil, vanilla extract, and buttermilk to the dry mixture. Mix until smooth.
- Bake: Pour the batter into the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
- Melt Sugar: In a saucepan over medium heat, melt sugar until it becomes a deep amber color.
- Add Butter and Cream: Add butter and stir until melted. Slowly add heavy cream and vanilla, whisking continuously. Add salt. Let it cool.
- Heat Cream: Heat heavy cream until it begins to simmer.
- Combine with Chocolate: Pour heated cream over chopped chocolate. Let sit for 5 minutes, then stir until smooth. Cool slightly.
- Whip Ingredients: In a large mixing bowl, combine heavy cream, powdered sugar, and vanilla. Beat until stiff peaks form.
- Layer Cake: Place one cake layer on a serving plate. Spread a layer of caramel sauce followed by whipped cream frosting.
- Repeat Layers: Add the second cake layer. Spread more caramel sauce, then cover with whipped cream.
- Finish with Toppings: Drizzle ganache over the top. Scatter chocolate shards and crushed caramel candies.
Notes
- Caramel Risks: Be cautious when making caramel, as sugar can burn easily.
- Frosting: Ensure the cake is completely cooled before frosting to avoid melting.
- Ganache: Adjust consistency by adding more chocolate for thickness or more cream for thinness.
