Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz fettuccine or penne pasta
  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Prepare ingredients by chopping garlic and slicing sun-dried tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; cook for about 6 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add sun-dried tomatoes and cook briefly.
  4. Pour in heavy cream and chicken broth; bring to a gentle simmer while stirring. Add grated Parmesan cheese until melted.
  5. Slice chicken into strips and return to the sauce along with cooked pasta. Toss gently to combine.
  6. Serve garnished with fresh basil or extra Parmesan if desired.
